Breaded Tofu Pieces

After overdosing on nut roasts over the festive period, I sought out an alternative centre piece for my meat-free Sunday lunch the other week.

Ingredients
1 pack of firm tofu
100ml soya milk
1 tsp thyme
1 crushed garlic clove
1 tsp black pepper
1 tbsp olive oil
A few sprinkles of plain flour
A few tbsps of breadcrumbs

1) Drain the tofu and cut into pieces of approximately 4x3cm and 2cm thick

2) Mix the soya milk, garlic, thyme, pepper and oil together. This will add some flavour to the tofu, as well as helping to bind the breadcrumbs (who needs egg, right?!)

3) Dip the the tofu pieces in the mix before gently rolling in the flour and then the breadcrumbs, ensuring adequate coverage

4) Grill for around 10 minutes on each side, or until firm and golden all over

These versatile pieces would be delicious with sweet potato chips and mushy peas, or even in a salad. Of course, on this occasion they accompanied my vegan Sunday roast!
